MATTHEW
LAUDONE

General Manager

Chef Matthew Laudone, a Thunder Bay native, brings a diverse culinary background shaped by his Italian heritage and global experiences. With a Confederation College Culinary Management Diploma, he trained at L'Atelier de Joël Robuchon in Paris, a 2-Star Michelin establishment, followed by roles as Sous Chef at prestigious establishments. Growing up in his parents' Italian restaurant, he developed a deep passion for Italian cuisine. He is currently the General Manager for Sodexo at Confederation College, where he oversees kitchen and retail food operations. Specializing in Italian cooking, Chef Laudone's journey reflects his commitment to culinary excellence, inspiring communities with his rich culinary heritage.


 

JAMIE
MINAKER

Executive Chef

Chef Jamie Minaker is a graduate of the Confederation College Culinary & Hospitality Management programs. He has gained his experience through being the Chef at local restaurants and establishments; The Silver Birch, Delta Marriott Anchor and Ore, and Heartbeat Hot Sauce. Through his years of culinary training, he has excelled in fine dining and pastry. Growing up I learned a lot of the cooking techniques from my father who worked in Greek restaurants and gained a passion for baking from my mother. While going through culinary school it became apparent to him how important food is for people's health and wellbeing. Through his teachings he hopes to inspire the next generation of cooks and students to teach those around them the importance of the knowledge of cooking and baking.


 

TONY
SGAMBELLURI

Chef

Tony Sgambelluri was born and raised in Thunder Bay. His love for cooking began at an early age as he watched his mother and grandmother spend their days in the kitchen preparing wonderful, yet simple Italian dishes.

Tony is a journeyman chef graduating from George Brown College and specializes in Italian cuisine. He gained much of his knowledge of Italian cooking by working in Siderno, Italy for many months. Tony has also worked in many hotels and restaurants throughout Thunder Bay as a head chef.

Becoming a culinary instructor was an important goal for Tony, as he now gets to pass along his passion for cooking to the culinary students and have them share their goals of becoming a chef with him.
